Refresingly simple avocado soup

I have to admit I was a little hesitant when I first read about avocado soup. I know, I know… avo’s are hot and everyone is eating them. I think I even saw a message the other day on the news that there might be a shortage of avocado’s soon. Go figure.

I didn’t like avocado’s right from the start though. I thought they were pretty tasteless and uninteresting. And then I discovered guacamole… The end…

Seriously, how can something that is – by default – creamy and bland in taste, transform into something soooo delicious? Have you thought about that? Anyway, since that time I am a huge fan of avocado. They’re full of healthy fats and other good stuff and just plain delicious. It’s the best way to add some creaminess to lots of things.

But than this soup… I read about someone making an avocado soup and since I just had my new high speed blender I figured I give it go.

Paired with the salty smoked salmon (don’t put that in the blender!!) it was totally delicious and perfect for warmer weather!

Ingredients

  • 2 avocado’s, stone and peel removed
  • 100 gr raw green peas
  • 1 can of coconut milk
  • 1 tsp fresh ginger
  • 1 tsp salt
  • 1 tsp pepper
  • 100-200 ml of water

Topping:

  • shaved almonds
  • hemp seeds
  • cilantro
  • smoked salmon

Instructions

  1. Place everything in a high speed blender and using the soup mode turn for about 5 minutes. If you do not have a high speed blender than use a regular one and mix until as smooth as possible. Add water if it is too thick.
  2. Serve directly from the blender of heat it a bit in a saucepan if you don’t like it cold. Do not boil!
  3. Serve in two plates and add the toppings
