Can I just complain for a little bit? It’s been one and a half month now since the accident and my initial hope of me being able to do stuff by now has gone out the window. Yes I do stuff but that is more by sheer will than by anything else. I am tired of sitting all day long, tired of not being able to do much, tired of having to rely on everyone else to do things for me and tired of that stupid leg that hurts most of the time. Tired of having to wait at least another 2 months before much will change and even longer before I am able to do the things I used to be able to do. If ever…

I would say bah humbug if it was still christmas.. 🙂 I’m just done with it. I have hardly any new recipes left to blog about and what is a foodblog without any new recipes? Doesn’t help….

I’m also tired of people asking me if I can walk already or if I am seeing any progress already. Understandable, as normally a broken leg takes roughly 6 weeks before you’re able to start walking again but in this case that is sadly no ordinary break. As Tom tends to say ‘Of course not. When you do something, you do it properly!” And people mean well and I shouldn’t be annoyed but I guess today is just one of those days.

Annoyed too because yes, I have photoshoots still but I feel utterly useless. I have to literally wait for everything to be placed in front of me and with a bit of luck I can then take a photo and without that luck I have to ask someone else to put my tripod higher or something along those lines. And when it is too high I can’t possibly see what is going on on the screen which means there is no way I can see anything of the composition etc. I might as well have someone else take the shots… Sigh…

So yes, I’m frustrated to say the least which doesn’t necessarily help at all and most days I can keep it in check but today not. Today I hate the world and Norway in particular for pulling such a trick on me…

But ok, enough with the moaning… You didn’t come here to hear me complain I’m guessing so instead I will serve you this delicious and healthy broccoli salad. I made a broccoli salad before using the completely raw broccoli but this time I quickly ran it under the boiling water of the quooker to take of the biggest crunch. And it was totally delicious. Adding the crunch of the roasted pumpkin and the sour crunch of the pomegranate seeds is just perfect.

Ingredients

  • 1 broccoli
  • 50 gr hazelnuts
  • 1 red onion
  • 2 tbsp apple vinegar
  • 120 gr pumpkin seeds
  • 2 tbsp maple syrup
  • 1 tbsp brown sugar
  • 1 tbsp of chili powder
  • pinch of salt
  • black pepper
  • 50 gr pomegranate seeds

Dressing

  • 2 tbsp mayonaise
  • 2 tbsp apple vinegar
  • pepper
  • salt

Instructions

  1. Place the broccoli in the kitchen processor and grind until it has the consistency of rice or coursous. Place in sieve and pour boiling water over it and leave to drain and cool.
  2. Roast the hazelnuts and cut the red onion in thin rings. Place the onion in a small bowl and add the two tablespoons of apple vinegar.
  3. Heat the oven to 180 ˚C and mix the pumpkinseeds with the maple syrup, brown sugar, black pepper, chili powder and salt. Mix together and spread on a baking tray and roast in the oven for around 15 minutes.
  4. Make the dressing by combining the ingredients (you can use the apple vinegar you used before to soak the onions)
  5. Mix the broccoli with the hazelnuts, red onion, pomegranate and finish by adding the roasted pumpkinseeds. Serve with the dressing

    Hang on in there girl, and use this time to plan fun projects, make goals and check out cool places in Cornwall you want to visit 😉
    We’ll all still be here when you’re back to banging out scrummy recipes on a regular basis. So take a deep breath and try to enjoy the down time.

      Thanks hon. It’s a little hard trying to enjoy something if you are so bound to either a chair or a bed… Get’s boring really fast, especially for someone who is really bad at sitting still! But you’re right and I do have good days and bad days.. 🙂

    Broccoli salad is probably my favorite type of salad! This looks great, especially with the pomegranate arils (another favorite)..

    Aww, I can totally understand how you feel Simone. I had a broken wrist couple years back. I assure you it does get better and you wont even remember. Salad is looking amazing. Take it easy…

    Gotta be frustrating. I could say it’s always darkest before dawn etc etc, but your healing is going to take as long as it takes, and unfortunately there’s no getting around that. I know you like to do your own photoshoots, but have you thought of doing some Light Room assisting during big fashion shoots? I mean the kind where they take 2000 photos in a session? I’ve read some of the photographers often hire people just to manage all the CF cards they’re generating, and import them into Light Room, make initial corrections, spot problems, make suggestions on lighting, etc etc. Doesn’t pay as well as being a photographer, but it’s something you can do sitting down. But I’ve just read about this — know nothing first hand. Anyway, good dish — I need healthy food like this Thanks!

      Thanks for the suggestion John. I’m not sure we would even have such big shoots here in the Netherlands. It’s quite a different scene here and – as far as I know – there is usually no budget for extra’s like that. But I’ll keep it in the back of my mind!

    First, You totally have the right to complain!!! Second, I am impressed you have even gotten back to work, albeit with help! I would have just moped and moaned and been miserable. So,you are seriously rocking!

      Thanks Asha. Haha… I would go mad if I can’t at least do something… It’s gonna be an interesting week with a cookbook shoot. A little nervous about that but hope I’ll manage!

    Simone I have just stumbled upon your blog, and am so glad I did. Your images are beautiful and this salad looks like it has to be made tonight. The ingredients are already on my grocery list. I love your honesty in this post – some times you have to let off steam, and I hope you feel better for it. We never really appreciate how great it is to be healthy until something goes wrong. I sincerely hope that you will be on the mend soon.

      Ah thanks so much. And you are so right; we tend to take things for granted until something does go wrong and it turns out to be the greatest good for sure, to be healthy. And you’re gonna love this broccoli salad! It’s delicious!

        I made this delicious salad with our dinner tonight. Garlic Lemon Chicken with vegetable rosti – oh wow the salad complimented it fanastically. Compliments all around from my entire family
