We have stopped with the whole30 but I had this salad lying around so I figured I share with you anyway as it is delicious and also great if you’re not on any diet whatsoever! It’s a quick and easy salad even though it needs  a little bit of adjusting from the original. We found the recipe in the book Hallo paleo from Willeke Linneman (In dutch) but like I said it just needs a little twist to make it special.

A few walnuts, some goji berries, pecans or raisins will be fantastic and will make it a really great lunch. Perfect for a monday afternoon!

Ingredients

  • 250 gr carrots
  • 300 gr of minced beef
  • 1 tsp of garam masala
  • mint
  • coriander
  • sesame seeds
  • salt
  • pepper
  • For the dressing:
  • lemonjuice
  • oliveoil
  • 1 small onion
  • ground ginger
  • optional; orange juice

Instructions

  1. Grate the carrots either by hand or in a machine. Mix the meat with the garam masala and some salt and pepper and mixed it well. Bake the minced meat in a frying pan and crumble it while baking.
  2. Make the dressing by mixing the ingredients and tasting if it is not too sour. i added a bit of orange juice into mine as the lemon was particularly sour. I would normally have added a bit of honey to take the sting out of it but since that wasn’t an option I used the orange juice.
  3. Mix the dressing through the carrots and add the minced beef. Season if needed and sprinkle with some sesameseeds.

    I would love this. I make a carrot salad quite often but I’ve never put beef mince in it. Good idea for a lovely lunch.

    See? That’s exactly what I mean. My oh my the Whole30 compliant recipes that you come up with. MOUTH WATERING! I am so making this one, sooner rather than later. With the addition of walnuts and raisins. LOVE the idea. 🙂
