The best recipe for coleslaw ever

I did promise right… So here is the recipe for this delicious coleslaw. The funny thing is that I was always kind of convinced that coleslaw came from the states. Just because it is so common there and is served with virtually everything and it is a classic BBQ dish. So imagine my surprise when I found out that coleslaw is – in fact – a Dutch invention! (ok well invention is maybe a big worth for a simple salad but still)

The word ‘cole’ is actually not a real word in English anyway, at least not in the sense of the meaning here (as it would be cabbage instead) so the word coleslaw is a quite literal translation of koolsla, as it is is called in Holland. Which goes to show that there is so much we take for granted which then turns out to be quite different.

But where ever it comes from; this is a delicious variation to the theme. And there are as many variations as there are ways to write coleslaw (uh..) And that makes sense as the ingredients are easy for creative interpretation. And I like this one best! My favorite coleslaw recipe!

Ingredients

  • 1 white cabbage
  • 2 large carrots
  • handful of raisins

Dressing:

  • mayonnaise
  • apple vinegar
  • pepper
  • salt
  • aniseed

Instructions

  1. Cut the cabbage finely or grate in a food processor. Grate the carrots as well. Add the vegetables together in a large bowl and add the raisins.
  2. Make a large qty of dressing with the given ingredients and taste in between. The exact qty is depending on your taste, but if you start first with the amount of mayo you think you need you can build on that and add vinegar bit by bit till it is to your liking.
  3. This salad is best if you make it a day before you’re gonna eat and leave to sit in the fridge overnight

If you’re doing a whole30, make sure your raisins are sugar free!
