Last monday we were visiting my parents and to be totally honest it always makes me kind of depressed. Such a sad sight to see them struggling so much. Both my parents are 80 years old, which is a respectable age, but my mum has been suffering from Parkinson’s disease for the last 20 years. And it’s a bad version of it, so she’s been rather ill for all of those 20 years. My dad is very quickly becoming very mentally unstable and we fear he might be getting dementia. But tests are still to be done on that.
They would love to be in an old people’s home (for the comfort and the company) but there is no place. My mum falls all the time and tends to break something every time too or gets some nasty cuts. Well, I will spare you all the details but it’s becoming a bigger worry every day/week.
I’ve never been really close with my parents for a gazillion reason but this is a life I would not wish on anyone. If this is how getting old looks, than I would like to pass the ‘honour’. I know it can be very different as well. I’ve seen plenty of examples but seeing my parents like that really makes me sad. And the older I get the more of a nightmare vision it becomes that I might end up that same way.
In the meantime we are busy with the preparation for my dad’s 80th birthday celebration next week. It’s supposed to be a party but I cannot see a lot of festivity in it. And the fact that more and more is being cut on elderly care here in the Netherlands it worries me a great deal.
What you need this info for? Well for nothing really but I just wanted to get it of my chest… Sorry about that.
So… over to more pleasant subjects and that is this delicious curry. Is it curry season yet, you wonder? Well no, not exactly but you can easily eat this dish any time of year I think. We had a kilo of pork in the freezer and it was time to do something with it. I saw this curry and just knew it had to be this one. Delicious with cauliflower couscous or cauliflower puree or of course with rice or mashed potatoes.Print

You can easily prepare this dish is a slowcooker as well. Depending on the meat you’re using count for roughly 6 hours on slow/low setting

For the spice blend:
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 3/4 tsp powdered ginger
- 2 tablespoons of sweet paprika
- 2 tsp of chili powder
- 2 tsp of ground cinnamon
- 4 tsp of ground cumin
- 4 tsp of ground coriander
- 2 tsp salt
- 1/2 tablespoon of ground cayenne pepper
For the curry:
- 2 pounds lamb, beef or porc
- salt and pepper to taste
- 1 tbsp coconut oil
- 2 medium onions, diced
- 1 cup coconut milk
- 1 1/4 cup of water
- In a small bowl combine all the spices together and mix them well with a fork. Set aside. Cut the meat into chunks and season generously with salt and pepper
- Heat the coconut oil in a Dutch oven or large pan over medium heat and add the meat in batches. Brown all over and as soon as that is done at the chopped onion to it.
- bake until the onion becomes soft and a little browned. Add the spicemix to the pan and stir until it becomes fragrant. This should take about 30 seconds
- Pour the coconut milk and the water in the pan and increase the heat to bring it to the boil. As soon as it boils, turn the heat down and put the lid on. Let it simmer for 1-2 hours or until the meat is tender.
- Once cooked remove the lid and continue to cook to reduce the sauce somewhat.
- Delicious with cauliflower puree or couscous
