Whole30 (2018) – day #2 – Staying strong

Resisting chocolate and freshly baked brownies!

We started the day with another omelette with vegetables. It’s not very exiting but it is quick and easy to make and fills us up right till lunch. So I expect a lot more of those in the near future.. ๐Ÿ™‚

I felt fine during the day. No withdrawal symptoms or other things going on. I had another photoshoot and my co-workers bought chocolate and even baked a brownie in the kitchen. It smelled delicious but I resisted it all and felt really good about that too!

Slow cooker

For dinner we had a beef stew from the slow cooker, with bell peppers, tomato and loads of spices. With cauliflower rice. It was super delicious. I love my slow cooker especially while on a whole30. It is so easy to throw in things and know that dinner will be waiting for you when you get home. The shoot went on pretty long and I was home only around 7.15 pm. It would have been hard if I would still have to cook at that time!

What did I eat?

  • Omelette with bell pepper and spinach
  • 1 banana
  • Tuna salad with avocado, tomatoes and a dressing of mayonaise and apple cider vinegar
  • 1 banana
  • Beef tomato stew with cauliflower rice
